- Boil water: Start by bringing 1 cup of water to a rolling boil in a small saucepan.
- Cook oats: Add the rolled oats and a pinch of sea salt to the boiling water. Reduce the heat and let it simmer, covered, for about 5 minutes.
- Poach egg: While the oats are resting, gently crack the large egg into a separate pot of a lightly simmering water bath. Poach the egg for approximately 3 minutes.
- Assemble bowl: Spoon the warm oatmeal into a serving bowl, then gently place the poached egg on top. Add sliced avocado, Parmesan cheese, and fresh herbs.
- Season & serve: Finish off with a dash of black pepper. Serve immediately while everything is warm.
