How to Make Strawberry Earthquake Cake
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
- Prepare the strawberry cake mix in a large bowl following the package directions.
- Fold in the chopped strawberries, white chocolate chips, shredded coconut, and optional nuts.
- Pour half of the prepared batter into the greased baking pan, spreading it evenly.
- In a separate bowl, beat the softened cream cheese and butter until smooth. Gradually mix in the powdered sugar and vanilla extract until fully combined.
- Drop spoonfuls of the cream cheese mixture over the cake batter in the pan, creating pockets.
- Pour the remaining cake batter on top of the cream cheese layer and gently swirl the mixtures together.
- Bake for 40-45 minutes, or until the center is set and a toothpick comes out clean.
- Allow the cake to cool completely in the pan before slicing.
