- Spread the ricotta cheese generously on one side of each slice of bread.
- Layer the sun-dried tomatoes, fresh spinach, and mozzarella (or provolone) evenly on two of the slices.
- Top the sandwiches with the remaining bread slices, ricotta side down, and gently press to secure.
- Heat a skillet over medium heat and add butter or olive oil until it shimmers.
- Grill the sandwiches for 3-4 minutes per side until the bread is golden brown and the cheese has melted.
