How to Make Twice Baked Sweet Potatoes
- Preheat your oven to 375°F (190°C).
- Gently pierce each sweet potato several times with a fork and place them on a baking sheet. Bake for about 1 hour until tender.
- Cut the sweet potatoes in half lengthwise and scoop out the flesh, leaving a thin layer inside the skins. Mash the flesh with butter, brown sugar, cinnamon, nutmeg, milk, salt, and pepper until smooth.
- Spoon the filling back into the sweet potato skins and optionally top with sour cream or a sprinkle of brown sugar and cinnamon.
- Place the stuffed sweet potatoes back in the oven for another 15-20 minutes until the tops are lightly browned.
- Serve warm, adding any desired toppings.
