Method
 

How to Make Twice Baked Sweet Potatoes
  1. Preheat your oven to 375°F (190°C).
  2. Gently pierce each sweet potato several times with a fork and place them on a baking sheet. Bake for about 1 hour until tender.
  3. Cut the sweet potatoes in half lengthwise and scoop out the flesh, leaving a thin layer inside the skins. Mash the flesh with butter, brown sugar, cinnamon, nutmeg, milk, salt, and pepper until smooth.
  4. Spoon the filling back into the sweet potato skins and optionally top with sour cream or a sprinkle of brown sugar and cinnamon.
  5. Place the stuffed sweet potatoes back in the oven for another 15-20 minutes until the tops are lightly browned.
  6. Serve warm, adding any desired toppings.
