Ingredients
  

For the Falafel
  • 1 cup dried chickpeas soaked overnight
  • 1 cup fresh herbs (parsley or cilantro) chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
For the Wrap
  • 4 pieces pita bread or wraps preferably whole-grain
  • 1 cup hummus homemade or store-bought
For the Toppings
  • 1 small red onion thinly sliced and marinated in sumac
  • 2 cups shredded lettuce any leafy green
  • 1 cup tomato slices ripe
  • 1 cup pickles any pickled vegetables you love
For the Dressing
  • 1/2 cup tahini adjust with water for desired thickness
  • 2 tablespoons lemon juice fresh-squeezed
  • 1 teaspoon salt to taste

Method
 

Preparation
  1. Soak chickpeas overnight in water.
  2. Drain and rinse the chickpeas, then pulse them with fresh herbs and spices in a food processor until chunky.
  3. Form the mixture into small balls or patties and chill in the fridge for 30-60 minutes.
  4. Fry falafel in oil for 2-3 minutes until golden brown or cook in an air fryer.
  5. Whisk together tahini, lemon juice, salt, and cold water until smooth for dressing.
  6. Assemble the wrap by layering pita with hummus, veggies, falafel, and tahini dressing, then roll it up.
