How to Make Zucchini Potato Fritters
  1. Grate the zucchini and potatoes using a box grater. Squeeze out excess moisture.
  2. In a large mixing bowl, combine the grated zucchini, potatoes, onion, flour, eggs, salt, black pepper, and garlic powder.
  3. Pour about half an inch of vegetable oil into a frying pan and heat it over medium.
  4. Carefully drop spoonfuls of the mixture into the hot oil and flatten slightly. Fry for about 3-4 minutes on each side.
  5. Use a slotted spoon to remove the fritters and place them on paper towels to absorb excess oil.
  6. Serve warm, paired with dipping sauces like sour cream or tzatziki.
