Preparation Steps
  1. Prepare the Pan: Line an 8-inch or 9-inch square baking dish with parchment paper, ensuring there’s an overhang.
  2. Melt Ingredients: In a large saucepan over medium heat, melt the butter and brown sugar together, stirring until fully combined. Add in the vanilla extract and mix well.
  3. Combine Oats: Lower the heat and stir in the rolled oats. Cook for about 3-4 minutes until well blended.
  4. Form the Base Layer: Press half of the oat mixture firmly into the bottom of the prepared baking dish.
  5. Melt the Filling: In a microwave-safe bowl, melt the chocolate chips and peanut butter together until smooth.
  6. Spread the Filling: Pour the chocolate mixture over the base layer, spreading it evenly.
  7. Top it Off: Add the remaining oat mixture on top, pressing gently.
  8. Chill and Set: Refrigerate the bars for 2-3 hours or overnight until firm. Cut into bars.
