  • 1 pound Pork Loin Thinly sliced
  • 1/2 cup All-Purpose Flour Can substitute with gluten-free flour
  • 2 tablespoons Extra Virgin Olive Oil
For the Sauce
  • 1 cup Low-Sodium Chicken Broth
  • 1 tablespoon Fresh Lemon Juice Juice from about 1 lemon
  • 2 tablespoons Capers Drained and rinsed
For Garnish
  • 2 tablespoons Fresh Parsley Chopped
  • to taste Salt
  • to taste Pepper

Instructions
  1. Dredge the thinly sliced pork loin in all-purpose flour, shaking off any excess.
  2. Heat olive oil in a large skillet over medium-high heat until it shimmers.
  3. Cook the pork in batches for 3-4 minutes on each side until golden brown.
  4. Pour in chicken broth, lemon juice, and capers in the same skillet and stir to deglaze.
  5. Return the seared pork to the skillet and simmer for about 5 minutes.
  6. Season with salt and pepper, garnish with parsley, and serve.
