Ingredients
  

For the Noodles
  • 8 oz Rice Noodles labeled 'Pad Thai noodles'
For the Protein
  • 1 lb Chicken Breast can be substituted with shrimp or firm tofu
For Cooking
  • 2 tbsp Vegetable Oil for cooking the chicken
  • 4 cloves Garlic minced
For the Sauce
  • 2 tbsp Fish Sauce
  • 1 tbsp Tamarind Paste or lime juice and brown sugar as substitute
  • 2 tbsp Soy Sauce gluten-free option for dietary needs
  • 1 tbsp Brown Sugar
  • 1 tbsp Chili Paste optional, to taste
For the Garnish
  • 2 large Eggs beaten
  • 1 cup Bean Sprouts
  • 2 stalks Green Onions sliced
  • 1/4 cup Cilantro chopped
  • 2 wedges Lime for serving
  • 1/4 cup Crushed Peanuts for garnish

Method
 

Cooking Instructions
  1. Soak noodles in warm water for 20-25 minutes until softened. Drain well.
  2. In a bowl, whisk together fish sauce, tamarind paste, brown sugar, soy sauce, and chili paste. Set aside.
  3. Heat oil in a wok over medium-high heat. Add chicken breast and cook until golden brown, about 4-5 minutes.
  4. Push chicken aside and pour in beaten eggs. Scramble until soft curds form.
  5. Add the soaked noodles and prepared sauce to the wok. Toss until well-coated and tender, about 2-3 minutes.
  6. Stir in bean sprouts and green onions for the last minute of cooking. Garnish with peanuts, cilantro, and lime juice.
