- Soak noodles in warm water for 20-25 minutes until softened. Drain well.
- In a bowl, whisk together fish sauce, tamarind paste, brown sugar, soy sauce, and chili paste. Set aside.
- Heat oil in a wok over medium-high heat. Add chicken breast and cook until golden brown, about 4-5 minutes.
- Push chicken aside and pour in beaten eggs. Scramble until soft curds form.
- Add the soaked noodles and prepared sauce to the wok. Toss until well-coated and tender, about 2-3 minutes.
- Stir in bean sprouts and green onions for the last minute of cooking. Garnish with peanuts, cilantro, and lime juice.
