Method
 

How to Make Coconut Curry Chicken
  1. Prepare ingredients by dicing the onion, mincing the garlic and ginger, and slicing the red bell pepper.
  2. Heat 2 tablespoons of coconut oil in a large deep skillet over medium-high heat. Add the diced onion and sauté for 3-5 minutes until golden.
  3. Add minced garlic and ginger to the skillet, stirring to coat with oil.
  4. Lower the heat to low and mix in yellow curry powder, red curry paste, and ground coriander, stirring for 2-3 minutes.
  5. Return the heat to medium-high, adding 1 tablespoon of coconut oil and the sliced red bell pepper. Stir for 1-2 minutes.
  6. Add chicken pieces, seasoning with salt and pepper. Cook for 4-5 minutes until browned.
  7. Pour in coconut milk, lime juice, and brown sugar, stirring until chicken is cooked through.
  8. If desired, stir in fish sauce. Serve over rice or with warm naan, garnished with herbs and nuts.
