Instructions
  1. Season the chicken thighs dry and season generously with salt and pepper.
  2. In a bowl, mix together the honey, minced garlic, soy sauce, and red pepper flakes if desired.
  3. Place the seasoned chicken in the crockpot and pour the honey garlic sauce evenly over the top.
  4. Cover and cook on low for 4 to 6 hours, checking for doneness at 4 hours.
  5. About 10 minutes before serving, mix cornstarch with a little water, then stir into the sauce in the crockpot.
  6. Switch to high and cook for an additional 5 to 10 minutes until thickened.
  7. Serve the chicken over rice or quinoa, garnished with sesame seeds and green onions.
