For the Salad
  • 2 cups Cucumber opt for firm, fresh cucumbers
  • 1/4 cup Peanut Butter can substitute with almond or cashew butter
For the Dressing
  • 2 tablespoons Soy Sauce low-sodium preferred
  • 1 tablespoon Vinegar rice vinegar or apple cider vinegar
  • 1 tablespoon Sesame Oil can substitute with olive oil

Method
 

Preparation
  1. Wash and slice the cucumbers into thin rounds and place in a large mixing bowl.
  2. Combine peanut butter, soy sauce, vinegar, and sesame oil in a separate bowl and whisk until smooth.
  3. Pour the dressing over cucumbers and gently toss to coat.
  4. Cover and refrigerate for at least 15 minutes.
  5. Serve chilled, optionally garnished with sesame seeds or sliced green onions.
