Cooking Steps
  1. In a large skillet, heat the chicken over medium heat. Season it with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for about 5 minutes per side until golden brown.
  2. In a small bowl, whisk together BBQ sauce and honey until well blended. Pour this mixture over the chicken in the skillet.
  3. Sprinkle the rice evenly over the chicken, then pour in the chicken broth. Stir gently to combine all the ingredients and bring to a gentle simmer.
  4. Cover the skillet and reduce the heat to low. Let it cook for approximately 20 minutes, or until the rice is tender and has absorbed all the liquid.
  5. In the last 5 minutes of cooking, add your mixed vegetables on top of the rice. Cover again to steam.
  6. Remove the skillet from heat and let it sit for 5 minutes before uncovering. Fluff the rice gently with a fork and garnish if desired.
