Cooking Steps
- In a large skillet, heat the chicken over medium heat. Season it with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for about 5 minutes per side until golden brown.
- In a small bowl, whisk together BBQ sauce and honey until well blended. Pour this mixture over the chicken in the skillet.
- Sprinkle the rice evenly over the chicken, then pour in the chicken broth. Stir gently to combine all the ingredients and bring to a gentle simmer.
- Cover the skillet and reduce the heat to low. Let it cook for approximately 20 minutes, or until the rice is tender and has absorbed all the liquid.
- In the last 5 minutes of cooking, add your mixed vegetables on top of the rice. Cover again to steam.
- Remove the skillet from heat and let it sit for 5 minutes before uncovering. Fluff the rice gently with a fork and garnish if desired.
