Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Slice the bell peppers into 1/4-inch strips and the onion into thin half-moons.
  3. Cook the ground beef in a skillet over medium heat, seasoning with salt and pepper until browned, about 5-7 minutes.
  4. Drain excess fat after browning the beef.
  5. Sauté the peppers and onions in a separate skillet with a touch of oil until soft, roughly 7-8 minutes.
  6. Mix the cream cheese, chicken stock, and cream into the beef skillet, stirring until smooth.
  7. Add minced garlic, oregano, cumin, chili powder, paprika, and lime juice to the beef mixture and whisk until combined.
  8. Combine the sautéed veggies with the beef mixture in a baking dish.
  9. Top generously with cheddar cheese and bake for 25 minutes or until the cheese is bubbly and golden.
