  • 1 small Red Chilli deseeded and fine diced
  • 2 tsp Minced Ginger fresh is recommended
  • 1 tsp Minced Garlic adds aromatic depth
  • 1 Red Capsicum diced
For the Sauce
  • 1/4 cup Brown Sugar coconut sugar is a healthier alternative
  • 1/4 cup Rice Wine Vinegar can substitute with apple cider vinegar
  • 1/4 cup Oyster Sauce use soy sauce for a vegetarian alternative
  • 2 tbsp Soy Sauce enriches the overall flavor

Cooking Instructions
  1. In your slow cooker, mix together the pork mince, drained pineapple, diced red chilli, minced ginger, minced garlic, and diced red capsicum. Stir until well combined.
  2. In a separate bowl, whisk the brown sugar, rice wine vinegar, oyster sauce, and soy sauce. Pour the sauce over the ingredients in the slow cooker, ensuring everything is evenly coated.
  3. Cover and cook on low heat for about 5 hours, stirring occasionally to check for tenderness.
  4. For a thicker sauce, mix 1 tablespoon of cornflour with 1 tablespoon of water, then stir it into the slow cooker about 10 minutes before serving.
  5. Serve the sweet & sour pork mince over fluffy steamed rice or in burger buns. Garnish with fresh cilantro or green onions for that extra touch!
