  • 1 cup Lemon Curd Store-bought can be used for convenience, or homemade for a fresher taste.

Method
 

Preparation
  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press this mixture firmly into the bottom of a lined baking dish.
  3. In a mixing bowl, beat the softened cream cheese with sugar, eggs, and vanilla extract until the mixture is smooth and creamy.
  4. Pour the cheesecake filling over the prepared crust. Swirl lemon curd gently through the filling using a knife.
  5. Bake for approximately 30-35 minutes, or until the filling is set but still slightly jiggly in the center.
  6. Allow the bars to reach room temperature, then refrigerate for at least 3 hours to set completely.
  7. Slice into squares and serve chilled, optionally garnished with fresh berries or whipped cream.
