Preparation
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press this mixture firmly into the bottom of a lined baking dish.
- In a mixing bowl, beat the softened cream cheese with sugar, eggs, and vanilla extract until the mixture is smooth and creamy.
- Pour the cheesecake filling over the prepared crust. Swirl lemon curd gently through the filling using a knife.
- Bake for approximately 30-35 minutes, or until the filling is set but still slightly jiggly in the center.
- Allow the bars to reach room temperature, then refrigerate for at least 3 hours to set completely.
- Slice into squares and serve chilled, optionally garnished with fresh berries or whipped cream.
