  • 1 cup granulated sugar can substitute with brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon fresh ground preferred
  • 1 teaspoon ginger can substitute with allspice
  • 1/4 teaspoon salt
  • 3 cups all-purpose flour can use gluten-free blend
For the Pumpkin Filling
  • 1 cup pumpkin puree avoid pumpkin pie filling
  • 1/4 cup apple juice can swap with water or another juice
  • 1 tablespoon cornstarch omit for a runnier filling

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Combine melted unsalted butter and granulated sugar in a mixing bowl using an electric mixer until smooth. Add egg and molasses, mixing well.
  3. Whisk together flour, baking soda, salt, cinnamon, and ginger. Gradually add this to the wet mixture until a soft dough forms. Chill for 30-60 minutes.
  4. Prepare the pumpkin filling by mixing pumpkin puree, sugar, and spices in a saucepan over medium heat. Whisk cornstarch into apple juice and stir into pumpkin. Simmer for 10 minutes until thickened. Let cool.
  5. Roll out the chilled dough to 1/4-inch thick. Use cookie cutters to cut shapes, ensuring half have jack-o-lantern faces cut into them.
  6. Spoon the cooled pumpkin filling onto whole cookies, then top with the jack-o-lantern cookies, sealing edges.
  7. Bake for 12-14 minutes until edges are golden brown. Cool on baking sheet for a few minutes before transferring to a wire rack.
  8. Optional: Dust with powdered sugar before serving.
