- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Combine melted unsalted butter and granulated sugar in a mixing bowl using an electric mixer until smooth. Add egg and molasses, mixing well.
- Whisk together flour, baking soda, salt, cinnamon, and ginger. Gradually add this to the wet mixture until a soft dough forms. Chill for 30-60 minutes.
- Prepare the pumpkin filling by mixing pumpkin puree, sugar, and spices in a saucepan over medium heat. Whisk cornstarch into apple juice and stir into pumpkin. Simmer for 10 minutes until thickened. Let cool.
- Roll out the chilled dough to 1/4-inch thick. Use cookie cutters to cut shapes, ensuring half have jack-o-lantern faces cut into them.
- Spoon the cooled pumpkin filling onto whole cookies, then top with the jack-o-lantern cookies, sealing edges.
- Bake for 12-14 minutes until edges are golden brown. Cool on baking sheet for a few minutes before transferring to a wire rack.
- Optional: Dust with powdered sugar before serving.
