How to Make Dragon Chicken
  1. Marinate Chicken: In a bowl, combine the chicken with the egg white, cornstarch, salt, and pepper. Allow it to marinate for about 10–15 minutes.
  2. Fry Chicken: Heat vegetable oil in a skillet over medium-high heat. Fry the marinated chicken in batches until golden brown and crispy.
  3. Make Sauce: In the skillet, add sesame oil. Sauté garlic, ginger, and dried red chilies for 1–2 minutes until fragrant.
  4. Combine Sauce Ingredients: Stir in ketchup, soy sauce, chili garlic sauce, vinegar, and sugar. Simmer for 2–3 minutes, adjusting with water if needed.
  5. Toss Chicken: Add fried chicken to the sauce and toss gently. Simmer for an additional minute.
  6. Garnish and Serve: Top with sliced green onions and toasted sesame seeds. Serve with rice or noodles.
