Preparation Steps
- Preheat your oven to 400°F.
- In a mixing bowl, combine the fresh lemon zest, lemon juice, and sugar; stir until well blended.
- Lightly flour a clean surface and roll out the puff pastry to about 1/8 inch thickness.
- Use a round cutter to cut circles from the pastry. Place a teaspoon of lemon filling in the center of each circle, then fold over and press edges with a fork to seal.
- Brush the tops of the pastries with egg wash or a vegan alternative.
- Arrange on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.
- Allow to cool on a wire rack for a few minutes before serving.
