Method
 

Cooking Instructions
  1. In a medium-sized bowl, whisk together all-purpose flour, baking powder, baking soda, cinnamon, and salt until well combined.
  2. In a separate bowl, whisk plain yogurt, large eggs, and sugar (if using) until smooth and creamy.
  3. Gently fold the grated apple into the wet mixture, distributing evenly.
  4. Gradually add the dry ingredient mix to the wet mix, stirring gently until just combined.
  5. Incorporate vegetable oil or melted butter into the batter.
  6. Preheat a greased skillet over medium heat.
  7. Pour about 1/4 cup of batter for each pancake into the skillet, cooking until bubbles form on the surface, about 2-3 minutes.
  8. Carefully turn the pancakes over and cook for another 2-3 minutes until golden brown.
  9. Continue cooking remaining batter, adjusting heat as necessary.
