Ingredients
  

For the Meatloaf
  • 1 pound Ground Chicken can replace with ground turkey or lean ground beef
  • 1 cup Breadcrumbs use gluten-free breadcrumbs if needed
  • 1/2 cup Parmesan Cheese freshly grated preferred
  • 3 cloves Garlic minced; substitute with 1 teaspoon garlic powder if needed
  • 1/4 cup Parsley can use basil or spinach
  • 1 medium Onion can use shallots for milder taste
  • 1 large Eggs no substitutions recommended
  • 1/4 cup Milk can use almond milk or other non-dairy options
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Glaze
  • 1/2 cup Ketchup
  • 1/4 cup Parmesan Cheese use freshly grated for best results
  • 1 tablespoon Worcestershire Sauce consider adding a dash of hot sauce for spice

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Prepare your loaf pan by lining it with parchment paper or lightly greasing it.
  2. Combine ground chicken, breadcrumbs, grated Parmesan, minced garlic, chopped parsley, chopped onion, eggs, milk, Italian seasoning, salt, and pepper in a large bowl. Mix gently until just combined.
  3. Optional: Fold in shredded mozzarella for extra cheesiness.
  4. Shape the mixture into a loaf and place it in your prepared loaf pan.
  5. Prepare the glaze by mixing ketchup, Parmesan, minced garlic, and Worcestershire sauce in a separate bowl. Spread the glaze over the top of the meatloaf.
  6. Bake for 55-65 minutes until golden brown and internal temperature reaches 165°F (74°C).
  7. Allow the meatloaf to rest for about 10 minutes before slicing.
