Ingredients
  

For the Meatloaf
  • 1 lb Lean Ground Chicken 92-93% lean for best results
  • 1 cup Panko Breadcrumbs
  • 1/2 cup Freshly Grated Parmesan Cheese Grana Padano works as an alternative
  • 1/4 cup Milk Non-dairy milk for lactose intolerance
  • 1 large Eggs Flax egg for vegan option
  • 1 cup Yellow Onion Cooked for sweetness
  • 2 cloves Garlic Minced
  • 1/4 cup Fresh Parsley Feel free to swap in other herbs
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt
  • 1/2 teaspoon Freshly Ground Black Pepper
For Sautéing
  • 2 tablespoons Olive Oil
For the Tangy Glaze (optional)
  • 1/2 cup Ketchup Can use BBQ sauce
  • 1 tablespoon Light Brown Sugar
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Apple Cider Vinegar
  • 1 clove Garlic Minced for the glaze

Method
 

Preparation
  1. Sauté minced onion in olive oil over medium-low heat for 5-7 minutes until translucent.
  2. Add minced garlic to the onions and cook for another 1-2 minutes until fragrant, then set aside to cool.
  3. Whisk together milk and eggs in a bowl. Then mix in panko breadcrumbs, grated Parmesan, the cooled onion-garlic mixture, fresh herbs, and other seasonings. Let sit for 5 minutes.
  4. Gently fold in the ground chicken until just combined, avoiding overmixing.
  5. Divide the mixture into 6 equal portions and shape them into individual loaves.
  6. Preheat the oven to 375°F (190°C) while preparing the optional glaze mixture.
  7. Bake the meatloaves for 15 minutes. If using the glaze, brush it on now and continue to bake for 7-10 minutes until the internal temperature reaches 165°F (74°C).
  8. Rest the meatloaves for 5-10 minutes after baking before serving.
