Preparation
- Sauté minced onion in olive oil over medium-low heat for 5-7 minutes until translucent.
- Add minced garlic to the onions and cook for another 1-2 minutes until fragrant, then set aside to cool.
- Whisk together milk and eggs in a bowl. Then mix in panko breadcrumbs, grated Parmesan, the cooled onion-garlic mixture, fresh herbs, and other seasonings. Let sit for 5 minutes.
- Gently fold in the ground chicken until just combined, avoiding overmixing.
- Divide the mixture into 6 equal portions and shape them into individual loaves.
- Preheat the oven to 375°F (190°C) while preparing the optional glaze mixture.
- Bake the meatloaves for 15 minutes. If using the glaze, brush it on now and continue to bake for 7-10 minutes until the internal temperature reaches 165°F (74°C).
- Rest the meatloaves for 5-10 minutes after baking before serving.
