Preparation
  1. Prepare Cheesecake Filling: Beat together cream cheese, granulated sugar, and vanilla until smooth and creamy, about 2 minutes. Scoop small portions and freeze on a tray until firm.
  2. Make Spiced Sugar: In a mixing bowl, combine granulated sugar with the ginger, cinnamon, allspice, nutmeg, and cloves. Mix well until all spices are evenly distributed.
  3. Prepare Cookie Dough: In one bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, allspice, and cloves. In another bowl, cream softened butter and light brown sugar until fluffy, around 2 minutes. Add egg yolks, molasses, and vanilla, then gradually mix in the dry ingredients until you achieve a thick, smooth dough.
  4. Combine: Scoop portions of cookie dough, flatten them slightly, and place a frozen cheesecake ball in the center. Enclose the filling with dough and roll into a smooth ball.
  5. Coat and Bake: Roll each dough ball in the spiced sugar coating, ensuring they are fully covered. Place on a baking sheet and bake at 350°F for 11-12 minutes or until the edges are set but the centers are soft.
  6. Cool: Let the cookies cool on the baking sheet for 10 minutes, then transfer them to wire racks to cool completely before serving.
