Preparation
- Preheat your oven to 400°F (200°C) to prepare for roasting the vegetables.
- Toss sliced mushrooms and onions in olive oil, then spread them evenly on a baking sheet. Roast for 15-20 minutes, until golden and moisture has evaporated.
- Generously butter both sides of your thick bread slices.
- Layer the roasted mushrooms and onions between two slices of Gouda and the prepared bread.
- Heat a skillet over medium heat and place the sandwich inside. Cook for about 3-4 minutes per side until the bread is golden brown and the cheese melts.
- Slice the sandwich in half and serve hot.
