Ingredients
  

Marinade
  • 1 cup teriyaki sauce use your favorite brand or homemade version
  • 2 tablespoons Dijon mustard can be omitted
  • 2 cloves garlic minced
  • 1 tablespoon sesame seeds optional for garnish
Kabobs
  • 1 pound chicken breast boneless, skinless
  • 1 cup fresh pineapple cut into chunks
  • 1 medium red bell pepper cut into chunks
  • 1 cup mushrooms whole or halved
  • 1 medium onion red or white, cut into chunks
  • 2 stalks green onion for garnish

Method
 

Preparation
  1. In a small bowl, combine teriyaki sauce, Dijon mustard, minced garlic, and sesame seeds. Stir until well-blended.
  2. Place the chopped chicken breast in a resealable bag. Pour the marinade over the chicken, seal the bag tightly, and massage gently. Let it marinate in the refrigerator for at least 2 hours, up to 24 hours.
  3. If using wooden skewers, soak them in water for about 30 minutes.
  4. Fire up your grill and set it to medium-high heat.
  5. Assemble your skewers by alternating marinated chicken, fresh pineapple, red bell pepper, mushrooms, and onion.
  6. Grill the skewers for 10-14 minutes, flipping every 3 minutes until chicken reaches 165°F (75°C).
  7. Let the kabobs rest for about 5 minutes before serving. Garnish with sliced green onions.
