Ingredients
  

For the Chicken Marinade
  • 1 kg Chicken (dark meat preferred) Use boneless thigh meat for extra tenderness
  • 2 tablespoons Fresh Ginger Substitute with ground ginger if needed
  • 4 cloves Garlic Fresh garlic adds richness
  • 3 tablespoons Soy Sauce Light soy sauce enhances umami
  • 1 tablespoon Dark Soy Sauce Optional for deeper color
  • 200 ml Coconut Cream Full-fat coconut milk is a lighter alternative
  • 2 tablespoons Sugar Substitute with honey or maple syrup for a natural sweetener
  • 2 tablespoons Oyster Sauce Can be replaced with soy sauce and a pinch of sugar
For the Glaze
  • 2 tablespoons Honey Maple syrup can be used instead
For the Peanut Sauce
  • 1/2 cup Peanut Butter Use natural, unsweetened for best flavor
  • 2 tablespoons Rice Vinegar Lime juice can be a substitute
  • 1 tablespoon Thai Red Curry Paste Adjust to your heat preference
  • 1/4 cup Water Use to adjust consistency of the peanut sauce
  • 1 teaspoon Sesame Oil Optional for nutty flavor
  • 1 teaspoon Chili Oil Add according to taste
  • 2 tablespoons Crushed Peanuts For garnishing the peanut sauce

Method
 

Cooking Instructions
  1. Cut the chicken into 1x1 inch chunks and combine with ginger, garlic, soy sauce, dark soy sauce, coconut cream, sugar, and oyster sauce. Marinate for at least 1-2 hours or overnight.
  2. If using wooden skewers, soak them in water for about 30 minutes.
  3. Thread the marinated chicken onto the skewers tightly.
  4. Mix together the coconut cream, honey, and soy sauce for the glaze. Set aside.
  5. Preheat your grill to 500°F (260°C).
  6. Grill the skewers for 15-18 minutes, flipping every 2-3 minutes until cooked through.
  7. In the final minutes, brush the skewers with the coconut glaze.
  8. Serve over a bed of lettuce with peanut sauce on the side.
