- Cut the chicken into 1x1 inch chunks and combine with ginger, garlic, soy sauce, dark soy sauce, coconut cream, sugar, and oyster sauce. Marinate for at least 1-2 hours or overnight.
- If using wooden skewers, soak them in water for about 30 minutes.
- Thread the marinated chicken onto the skewers tightly.
- Mix together the coconut cream, honey, and soy sauce for the glaze. Set aside.
- Preheat your grill to 500°F (260°C).
- Grill the skewers for 15-18 minutes, flipping every 2-3 minutes until cooked through.
- In the final minutes, brush the skewers with the coconut glaze.
- Serve over a bed of lettuce with peanut sauce on the side.
