  • 1 pound Ground Turkey or ground chicken/beef
  • 2 medium Zucchini or yellow squash
  • 2 cups Shredded Mozzarella Cheese or low-fat cheese
  • 1 cup Chopped Onion red or yellow onion
  • 2 cloves Minced Garlic or 1/4 tsp garlic powder
  • 14.5 ounces Diced Tomatoes canned or fresh
  • 1 tablespoon Dried Italian Herbs or mixed Italian spices
  • to taste Salt
  • to taste Black Pepper
  • 1 tablespoon Olive Oil or avocado oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and prepare a 9x13-inch baking dish by greasing it lightly.
  2. Sauté the chopped onion and minced garlic in olive oil over medium heat for about 2 minutes.
  3. Add the ground turkey to the skillet, using a spatula to break it up. Cook for about 5-6 minutes, or until browned.
  4. Stir in the diced tomatoes, Italian herbs, salt, and pepper, letting the mixture simmer for 3-4 minutes.
  5. Layer half of the zucchini in the greased baking dish, followed by half the turkey mixture and half the mozzarella cheese. Repeat.
  6. Bake the dish uncovered for 30-35 minutes or until bubbly and cheese is golden brown. Let cool for 5 minutes before serving.
