Ingredients
  

For the Crust
  • 2 cups shredded Zucchini salted and drained
  • 1 teaspoon Salt to draw out moisture
  • 2 large Eggs to bind the crust
  • 1/2 cup Parmesan Cheese for flavor and structure
For the Filling
  • 1 pound Ground Beef can substitute with turkey or plant-based meats
  • 1/2 cup chopped Onion adds sweetness
  • 2 cups Pizza Sauce for flavor
  • 1 Green Bell Pepper chopped
  • 1/2 cup sliced Mushrooms
  • 1/2 teaspoon Dried Oregano traditional herb
  • 1/2 teaspoon Garlic Powder
  • 1/4 teaspoon Black Pepper
For the Topping
  • 2 cups shredded Mozzarella Cheese for gooeyness
  • 1 cup shredded Cheddar Cheese for tangy flavor

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. Toss zucchini with salt and let it rest for 10 minutes.
  3. Drain zucchini using a kitchen towel.
  4. Combine drained zucchini with eggs, Parmesan, and half of the mozzarella.
  5. Grease a 9x13 inch baking dish and press the zucchini mixture evenly.
  6. Bake crust for 20 minutes until lightly browned.
Cooking the Filling
  1. Cook beef and onion in a skillet until browned and onion is translucent.
  2. Mix in pizza sauce, green bell pepper, mushrooms, oregano, garlic powder, and black pepper.
  3. Let it simmer for 5 minutes.
Assembly
  1. Spread beef mixture evenly over the baked crust.
  2. Top with remaining mozzarella and cheddar.
  3. Bake again for 20 minutes until cheese is melted and bubbly.
  4. Let cool slightly before slicing.
