- Preheat the oven to 350°F (175°C).
- Whisk together all-purpose flour, sooji, mawa powder, cardamom, baking soda, baking powder, and salt in a medium bowl.
- Combine yogurt, oil, ghee, sugar, and whole milk in a large bowl; whisk until smooth.
- Incorporate the dry ingredients into the wet mixture gradually, folding gently; add the chopped pistachios.
- Pour the batter into a greased loaf pan, leveling the top with a spatula.
- Bake for 30 minutes at 350°F, then reduce the temperature to 325°F and bake for an additional 5-8 minutes, until golden brown.
- Prepare the syrup: boil sugar and water, then add crushed cardamom, saffron, rose water, and lemon juice.
- Poke holes all over the top of the warm bread and pour the syrup over it to soak in.
- Serve warm with a cup of masala chai or coffee.
