For the Syrup

Method
 

Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Whisk together all-purpose flour, sooji, mawa powder, cardamom, baking soda, baking powder, and salt in a medium bowl.
  3. Combine yogurt, oil, ghee, sugar, and whole milk in a large bowl; whisk until smooth.
  4. Incorporate the dry ingredients into the wet mixture gradually, folding gently; add the chopped pistachios.
  5. Pour the batter into a greased loaf pan, leveling the top with a spatula.
  6. Bake for 30 minutes at 350°F, then reduce the temperature to 325°F and bake for an additional 5-8 minutes, until golden brown.
  7. Prepare the syrup: boil sugar and water, then add crushed cardamom, saffron, rose water, and lemon juice.
  8. Poke holes all over the top of the warm bread and pour the syrup over it to soak in.
  9. Serve warm with a cup of masala chai or coffee.
