Preparation Steps
  1. In a mixing bowl, combine the non-dairy yogurt, vanilla extract, maple syrup, and protein powder (if using). Mix until smooth and creamy.
  2. Gently fold in the mini chocolate chips.
  3. Line a baking sheet with parchment paper. Scoop dollops of the yogurt mixture onto the sheet.
  4. Place the baking sheet in the freezer for at least 1 hour, or until the bites are solid.
  5. Melt the chocolate chips with coconut oil in a microwave-safe bowl until smooth.
  6. Dip each frozen yogurt bite into the melted chocolate and allow excess to drip off.
  7. Freeze the bites again for 30 minutes to set the chocolate coating.
  8. Enjoy immediately or store in an airtight container in the freezer.
