Preparation Steps
- In a mixing bowl, combine the non-dairy yogurt, vanilla extract, maple syrup, and protein powder (if using). Mix until smooth and creamy.
- Gently fold in the mini chocolate chips.
- Line a baking sheet with parchment paper. Scoop dollops of the yogurt mixture onto the sheet.
- Place the baking sheet in the freezer for at least 1 hour, or until the bites are solid.
- Melt the chocolate chips with coconut oil in a microwave-safe bowl until smooth.
- Dip each frozen yogurt bite into the melted chocolate and allow excess to drip off.
- Freeze the bites again for 30 minutes to set the chocolate coating.
- Enjoy immediately or store in an airtight container in the freezer.
