Preparation
- Preheat your oven to 375°F (190°C).
- Sauté minced garlic and diced onions in a splash of olive oil until they turn translucent, about 3-4 minutes.
- Brown the ground turkey in the same pan, seasoning with chili powder, paprika, cumin, garlic powder, sea salt, black pepper, and cayenne.
- Mix in the beef broth, tomato sauce, and diced green chiles, allowing the mixture to thicken slightly for about 5 minutes.
- Warm the refried beans in a separate pot over medium-low heat.
- Assemble by laying out tortillas, filling each with refried beans, turkey mixture, and shredded cheese. Roll them carefully.
- Spread enchilada sauce in a casserole dish, place rolled enchiladas seam-side down, pour remaining sauce over and sprinkle with more cheese.
- Bake for about 20 minutes, or until the cheese is bubbling and golden.
