For the Soup
  • 2 pounds Stewing Beef opt for grass-fed
  • 1 teaspoon Salt adjust to taste based on broth sodium content
  • 1 teaspoon Pepper use freshly ground for best flavor
  • 1/4 cup All-purpose Flour can substitute with gluten-free flour
  • 2 tablespoons Olive Oil can substitute with vegetable oil or butter
  • 1 large Onion yellow or white onions for sweetness
  • 2 medium Carrot can replace with parsnips
  • 2 stalks Celery ensure cleaned before use
  • 4 cloves Garlic fresh minced garlic preferred
  • 1 tablespoon Oregano fresh is best but dried can be used
  • 2 tablespoons Tomato Paste can substitute with diced tomatoes
  • 8 cups Beef Broth low-sodium recommended
  • 2 cups Water can substitute with low-sodium broth
  • 1 cup Barley use pearl barley for best texture
  • 1/4 cup Parsley fresh for garnish
Optional Add-ins
  • Additional Vegetables like bell peppers or green beans
  • Herbs such as thyme or bay leaves

How to Make Beef Barley Soup
  1. Season your stewing beef with salt and pepper, then coat lightly in all-purpose flour.
  2. In a Dutch oven, heat olive oil and brown the beef in batches for 5-7 minutes until golden brown.
  3. Add chopped onions, diced carrots, and sliced celery. Cook for 5 minutes until soft and fragrant.
  4. Stir in minced garlic, oregano, and tomato paste. Sauté for 30 seconds until fragrant.
  5. Pour beef broth into the pot to deglaze, scraping up any brown bits.
  6. Return browned beef, add remaining beef broth and water. Bring to a boil, then cover and reduce to simmer for 30-45 minutes.
  7. Add pearl barley and cook for an additional 30 minutes, stirring occasionally.
  8. Before serving, taste and adjust seasoning. Garnish with freshly chopped parsley.
