How to Make Beef Barley Soup
- Season your stewing beef with salt and pepper, then coat lightly in all-purpose flour.
- In a Dutch oven, heat olive oil and brown the beef in batches for 5-7 minutes until golden brown.
- Add chopped onions, diced carrots, and sliced celery. Cook for 5 minutes until soft and fragrant.
- Stir in minced garlic, oregano, and tomato paste. Sauté for 30 seconds until fragrant.
- Pour beef broth into the pot to deglaze, scraping up any brown bits.
- Return browned beef, add remaining beef broth and water. Bring to a boil, then cover and reduce to simmer for 30-45 minutes.
- Add pearl barley and cook for an additional 30 minutes, stirring occasionally.
- Before serving, taste and adjust seasoning. Garnish with freshly chopped parsley.
