- Preheat your oven to 350°F (175°C).
- Brown the ground beef in a skillet over medium heat for about 7-10 minutes.
- Sauté diced sweet onion and sliced mushrooms in the same skillet until softened, about 5 minutes.
- Mix in garlic powder, smoked paprika, oregano, salt, and black pepper.
- Pour in drained black beans, marinara sauce, and half a can of coconut milk. Let it simmer for 5 minutes.
- Transfer the mixture to a baking dish, then add halved baby potatoes.
- Top with the remaining coconut milk.
- Cover with aluminum foil and bake for 50 minutes. Remove foil and bake uncovered for an additional 20 minutes.
- Let the casserole rest for 5-10 minutes before serving.
