Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium heat for about 7-10 minutes.
  3. Sauté diced sweet onion and sliced mushrooms in the same skillet until softened, about 5 minutes.
  4. Mix in garlic powder, smoked paprika, oregano, salt, and black pepper.
  5. Pour in drained black beans, marinara sauce, and half a can of coconut milk. Let it simmer for 5 minutes.
  6. Transfer the mixture to a baking dish, then add halved baby potatoes.
  7. Top with the remaining coconut milk.
  8. Cover with aluminum foil and bake for 50 minutes. Remove foil and bake uncovered for an additional 20 minutes.
  9. Let the casserole rest for 5-10 minutes before serving.
