  • 3 cups cooked chicken chopped rotisserie chicken is ideal
  • 4 tablespoons butter unsalted
  • 1 medium yellow onion chopped
  • 2 medium carrots diced
  • 2 celery stalks chopped
  • 2 cloves garlic minced
  • 1/4 cup all-purpose flour can substitute gluten-free
  • 2 cups chicken stock low-sodium recommended
  • 1 cup heavy cream can use non-dairy cream
  • 1 cup frozen peas do not thaw
  • 1 tablespoon fresh thyme chopped; can substitute dried
  • to taste salt
  • to taste pepper
For the Topping
  • 1 cup panko breadcrumbs can substitute crushed crackers
  • 1/2 cup Parmesan cheese freshly grated preferred

Method
 

How to Make Ina Garten Chicken Casserole
  1. Preheat your oven to 375°F (190°C).
  2. Melt 4 tablespoons of butter in a skillet over medium heat. Add chopped onion, diced carrots, and celery; sauté until soft, about 5-7 minutes.
  3. Add 2 minced garlic cloves and cook for another minute.
  4. Sprinkle in 1/4 cup of flour and stir for about 2 minutes.
  5. Gradually whisk in 2 cups of chicken stock and 1 cup of heavy cream, simmering until thickened, around 5 minutes.
  6. Fold in 3 cups of cooked chicken, 1 cup of frozen peas, and thyme; season with salt and pepper.
  7. Pour the mixture into a baking dish.
  8. Combine 1 cup of panko with 2 tablespoons of melted butter and 1/2 cup cheese. Sprinkle over the casserole.
  9. Bake for 25-30 minutes until the top is golden brown.
  10. Let cool for a few minutes before serving.
