Preparation
- Preheat your oven to 375°F (190°C).
- In a medium saucepan, combine rinsed quinoa and vegetable broth. Bring to a boil, then reduce to a simmer and cover for 15 minutes until liquid is absorbed.
- In a large skillet, heat olive oil over medium heat. Sauté finely diced onion until soft and translucent, about 5 minutes.
- Add minced garlic and stir until fragrant, about 1 minute.
- In a mixing bowl, combine cooked quinoa, sautéed onion and garlic, black beans, diced tomatoes, corn, cumin, chili powder, salt, and pepper. Mix well.
- Pour the mixture into a greased 9x13 inch casserole dish. If desired, sprinkle cheese on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
- Let casserole cool for a few minutes before serving. Garnish with fresh cilantro if desired.
