Ingredients
  

For the Base
  • 1 cup Quinoa Rinse before cooking
  • 2 cups Vegetable Broth Can substitute with chicken broth
For the Filling
  • 1 can Black Beans Rinse well
  • 1 can Diced Tomatoes Opt for canned with juices
  • 1 cup Corn Fresh or frozen
  • 1 medium Onion Finely diced
  • 2 cloves Garlic Minced
For Seasoning
  • 1 teaspoon Cumin Adjust to taste
  • 1 teaspoon Chili Powder Adjust to taste
  • 1 teaspoon Salt Add according to your liking
  • 1 teaspoon Pepper Add according to your liking
For Optional Creaminess
  • 1 cup Cheese (optional) Omit for vegan version, or use dairy-free cheese
For Finishing Touches
  • 1 tablespoon Olive Oil For sautéing
  • 1/4 cup Fresh Cilantro Optional garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, combine rinsed quinoa and vegetable broth. Bring to a boil, then reduce to a simmer and cover for 15 minutes until liquid is absorbed.
  3. In a large skillet, heat olive oil over medium heat. Sauté finely diced onion until soft and translucent, about 5 minutes.
  4. Add minced garlic and stir until fragrant, about 1 minute.
  5. In a mixing bowl, combine cooked quinoa, sautéed onion and garlic, black beans, diced tomatoes, corn, cumin, chili powder, salt, and pepper. Mix well.
  6. Pour the mixture into a greased 9x13 inch casserole dish. If desired, sprinkle cheese on top.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  8. Let casserole cool for a few minutes before serving. Garnish with fresh cilantro if desired.

Notes
