How to Make Caramelized Onion Pasta
- Boil a pot of salted water and add your pasta of choice. Cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta cooks, slice the onions thinly. This will help them caramelize evenly and develop that irresistible sweetness.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Allow the oil to warm until shimmering, ensuring it's ready for the onions.
- Add the sliced onions to the skillet, stirring occasionally for about 15-20 minutes. Cook until they are golden brown and fragrant, reducing heat if necessary to prevent burning.
- Stir in minced garlic for the last 2-3 minutes of caramelization. This adds a wonderful depth of flavor while allowing the garlic to soften without burning.
- Drain the cooked pasta and add it directly to the skillet with the caramelized onions and garlic. Pour in vegetable broth to moisten and toss everything together, allowing the flavors to meld for about 2 minutes on low heat.
- Sprinkle with fresh herbs, nutritional yeast, and cracked black pepper to taste. Serve warm, with additional herbs as a lovely finishing touch.
