How to Make Peach Crumb Bars
- Preheat your oven to 180°C (350°F) and line a baking pan (about 9x13 inches) with parchment paper.
- Mix in a large bowl the all-purpose flour, granulated sugar, brown sugar, baking powder, and salt until well combined.
- Add the melted butter, egg, and vanilla extract to the dry mixture. Stir gently until a crumbly dough forms.
- Press about two-thirds of this dough into the bottom of your prepared pan.
- Combine diced fresh peaches, sugar, cornstarch, lemon juice, and ground cinnamon in another bowl. Mix until coated.
- Spread the peach filling evenly over the crust.
- Crumble the remaining dough over the peach filling.
- Bake in your preheated oven for 35-40 minutes, until the topping is golden brown.
- Cool the bars completely in the pan on a wire rack before slicing into squares.
