- Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners.
- In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the melted butter, milk, vanilla extract, and cinnamon until well combined.
- Gently stir the wet ingredients into the dry mixture, just until blended, and fold in the diced peaches.
- In a small bowl, mix together the brown sugar, oats, and a sprinkle of cinnamon for the streusel topping.
- Spoon the muffin batter into each prepared muffin cup and sprinkle the streusel mixture over the top.
