Preparation
- Preheat the oven to 400°F (200°C) and grease a baking dish with olive oil.
- Season the chicken breasts generously with salt, pepper, garlic powder, and dried thyme.
- Sear the chicken in a skillet over medium-high heat for about 2–3 minutes on each side until golden brown.
- Whisk together honey and balsamic vinegar until combined and pour over the seared chicken.
- Scatter cranberries over the chicken and spoon ricotta cheese on top.
- Bake uncovered for 25–30 minutes until the chicken reaches 165°F.
- Sprinkle chopped pecans on top during the last 5 minutes of baking, if desired.
- Garnish with fresh parsley before serving.
