  • 4 pieces Boneless, Skinless Chicken Breasts Substitute with chicken thighs for a richer flavor.
  • 1 tablespoon Olive Oil Can substitute with avocado oil.
  • to taste Salt

  • 1 teaspoon Garlic Powder Fresh garlic can also be used.
  • 1 teaspoon Dried Thyme Fresh thyme can be used.
For the Glaze
  • 1 cup Fresh or Frozen Cranberries Dried cranberries can be used but will alter taste.
  • 1/2 cup Honey Maple syrup can be used as a vegan alternative.
  • 1/4 cup Balsamic Vinegar Red wine vinegar can substitute.
For the Topping
  • 1 cup Ricotta Cheese Can be substituted with cottage cheese or vegan ricotta.
  • 1/2 cup Chopped Pecans Optional, can use walnuts or almonds.
  • to taste Chopped Fresh Parsley For garnish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. Season the chicken breasts generously with salt, pepper, garlic powder, and dried thyme.
  3. Sear the chicken in a skillet over medium-high heat for about 2–3 minutes on each side until golden brown.
  4. Whisk together honey and balsamic vinegar until combined and pour over the seared chicken.
  5. Scatter cranberries over the chicken and spoon ricotta cheese on top.
  6. Bake uncovered for 25–30 minutes until the chicken reaches 165°F.
  7. Sprinkle chopped pecans on top during the last 5 minutes of baking, if desired.
  8. Garnish with fresh parsley before serving.
