Casserole Base
  • 2 cups Fresh Corn Kernels or 1 can (drained)
  • 1 can Creamed Corn
  • 1 cup Sour Cream can be substituted with coconut yogurt
  • 1 cup Shredded Cheddar Cheese use dairy-free cheese for lactose-free
  • 1/4 cup Honey can use maple syrup or agave nectar as substitutes
  • 1/4 cup Unsalted Butter melted
  • 1 cup Cornmeal can be swapped for gluten-free blend
  • 1 tablespoon Baking Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 3 large Eggs beaten
Garnish
  • 2 tablespoons Chopped Chives or Parsley

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Mix in a large bowl your corn (fresh or canned), creamed corn, sour cream, shredded cheddar cheese, honey, and melted butter.
  3. Whisk together in another bowl the cornmeal, baking powder, salt, black pepper, and garlic powder.
  4. Combine the dry mixture gradually into your wet ingredients.
  5. Fold in the beaten eggs gently.
  6. Grease a 9x13-inch baking dish and pour the corn mixture in.
  7. Bake for 35-40 minutes until the top is golden brown.
  8. Cool for 10 minutes before garnishing with chopped chives or parsley.
