  • 1 loaf Baguette feel free to swap with crackers or your favorite bread
  • 8 oz Cream Cheese Neufchâtel is a lighter option
  • 1 cup Sour Cream
For the Cheesy Mixture
  • 8 oz Manchego Cheese no direct substitute, but a cheddar-parmesan mix can work
For the Flavor
  • 8 oz Chorizo Sausage opt for a mild version if you prefer less heat
  • 1 tbsp Olive Oil vegetable oil is a suitable substitute
  • 2 tbsp Honey agave syrup can be used as an alternative
  • 1 tbsp Sherry Wine Vinegar red wine vinegar makes a fine substitute
  • 1 tsp Kosher Salt standard table salt can also be used
  • 0.5 tsp Black Pepper
For the Garnish
  • 0.25 cup Chopped Fresh Chives green onions are a great replacement or you can omit them

Method
 

Directions
  1. Slice the baguette into even pieces and broil them until golden brown, about 4-6 minutes on each side. This creates a perfect base for dipping!
  2. Preheat your oven to 425°F. In a mixing bowl, combine softened cream cheese, sour cream, and grated Manchego cheese, stirring until smooth and creamy.
  3. Spread the cheese blend into a greased gratin dish. Bake for 20-25 minutes, or until it’s bubbling and the top is a lovely golden brown.
  4. In a skillet, sauté diced chorizo in olive oil for 5-7 minutes until crispy. Be sure to stir occasionally and drain any excess fat after cooking.
  5. Add honey and sherry vinegar to the skillet with the chorizo. Stir everything together, cooking briefly until well combined and aromatic.
  6. Spoon the honey chorizo mixture over the baked cheese. Garnish with freshly chopped chives and serve alongside your toasted baguette slices for dipping.
