- Slice the baguette into even pieces and broil them until golden brown, about 4-6 minutes on each side. This creates a perfect base for dipping!
- Preheat your oven to 425°F. In a mixing bowl, combine softened cream cheese, sour cream, and grated Manchego cheese, stirring until smooth and creamy.
- Spread the cheese blend into a greased gratin dish. Bake for 20-25 minutes, or until it’s bubbling and the top is a lovely golden brown.
- In a skillet, sauté diced chorizo in olive oil for 5-7 minutes until crispy. Be sure to stir occasionally and drain any excess fat after cooking.
- Add honey and sherry vinegar to the skillet with the chorizo. Stir everything together, cooking briefly until well combined and aromatic.
- Spoon the honey chorizo mixture over the baked cheese. Garnish with freshly chopped chives and serve alongside your toasted baguette slices for dipping.
