- In a medium bowl, combine the softened goat cheese and cream cheese. Use a fork or a spatula to mix until smooth and creamy, ensuring there are no lumps.
- Drizzle honey into the cheese mixture and gently fold it in.
- On a separate plate, mix together the chopped crispy bacon, pecans, dried cranberries, and fresh rosemary.
- Lay a piece of plastic wrap on your counter. Spoon the cheese mixture onto the wrap and shape it into a log.
- Unwrap the log and roll it in the coating mixture until it’s completely covered.
- Place the finished log on a serving platter surrounded by fresh arugula.
- Refrigerate the log for at least 30 minutes to allow the flavors to meld.
