How to Make Vegan Pecan Upside Down Cake
- Preheat your oven to 180°C (350°F) and grease the bottom of an 8-inch round cake pan.
- In a saucepan, combine vegan butter, packed light brown sugar, maple syrup, ground cinnamon, and salt. Heat until melted and sugar dissolves. Stir in chopped pecans, spread in the pan, and freeze to set.
- In a mixing bowl, whisk together all-purpose flour, granulated sugar, and baking powder. Add dairy-free milk, neutral oil, apple cider vinegar, and vanilla extract. Mix until just combined.
- Pour the batter over the set pecan layer and bake for 48-53 minutes until golden and a toothpick comes out mostly clean.
- Allow the cake to cool for 10-15 minutes, then carefully flip onto a serving plate to reveal the topping.
- Optional: Drizzle with extra maple syrup before serving.
