- Chop and blend shallots, garlic, ginger, galangal, and dried chilies until they form a fine paste.
- In a large stew pot, heat cooking oil over medium heat. Add the spice paste, cinnamon, cloves, star anise, and cardamom. Stir-fry for 2-3 minutes.
- Toss in beef cubes and pounded lemongrass. Stir for 1 minute until meat is well-coated.
- Pour in coconut milk, tamarind juice, and water. Bring to a gentle simmer and cook for about 30-40 minutes.
- Add sliced kaffir lime leaves, kerisik, and sugar/palm sugar. Stir well and cook for another 10 minutes.
- Lower the heat and let it simmer for 1 to 1 1/2 hours until beef is fork-tender.
- Taste and adjust salt and sugar if needed. Serve hot with steamed rice.
