Ingredients
  

For the Beef
  • 1.5 lbs boneless beef short ribs cut into cubes for maximum tenderness
For the Oil and Spices
  • 5 tablespoons cooking oil essential for frying the spice mixture
  • 1 stick cinnamon about 2-inch length
  • 3 star anise contributes a licorice-like sweetness
  • 3 pods cardamom brings a floral and spicy note
  • 1 lemongrass cut into 4-inch lengths and pounded
For the Sauce
  • 1 cup thick coconut milk rich and creamy
  • 1 cup water balances the richness
  • 2 teaspoons tamarind pulp soaked in warm water
  • 6 kaffir lime leaves very finely sliced
  • 6 tablespoons kerisik toasted coconut
  • 1 tablespoon sugar or palm sugar to taste
  • Salt to taste
For the Aromatics
  • 5 shallots add sweetness and depth
  • 1 inch galangal provides an exotic flavor
  • 5 cloves garlic for robustness
  • 1 inch ginger adds warmth
  • 10-12 dried chilies soaked and seeded for a kick

Method
 

  1. Chop and blend shallots, garlic, ginger, galangal, and dried chilies until they form a fine paste.
  2. In a large stew pot, heat cooking oil over medium heat. Add the spice paste, cinnamon, cloves, star anise, and cardamom. Stir-fry for 2-3 minutes.
  3. Toss in beef cubes and pounded lemongrass. Stir for 1 minute until meat is well-coated.
  4. Pour in coconut milk, tamarind juice, and water. Bring to a gentle simmer and cook for about 30-40 minutes.
  5. Add sliced kaffir lime leaves, kerisik, and sugar/palm sugar. Stir well and cook for another 10 minutes.
  6. Lower the heat and let it simmer for 1 to 1 1/2 hours until beef is fork-tender.
  7. Taste and adjust salt and sugar if needed. Serve hot with steamed rice.
