  • 4 oz Cream Cheese A full-fat or low-fat version works.
  • 1 cup Shredded Mozzarella Cheese Swap for cheddar or dairy-free for variation.
For the Finish

Cooking Instructions
  1. In a large skillet, sauté ground beef, diced onion, and minced garlic over medium heat until the beef is browned and the onions are tender, about 5-7 minutes. Drain any excess fat.
  2. Sprinkle in chili powder, cumin, salt, and pepper. Stir well and let the spices bloom for an additional 2 minutes.
  3. Prepare the tortellini according to package instructions; typically boil for about 3-5 minutes until al dente. Drain and set aside.
  4. Mix in red enchilada sauce and cream cheese into the beef mixture until smooth and creamy, about 2-3 minutes.
  5. Gently fold the cooked tortellini into the creamy beef mixture, ensuring each piece is coated.
  6. Sprinkle shredded mozzarella cheese on top. Cover the skillet for 2-3 minutes to melt the cheese.
  7. Garnish with chopped fresh cilantro and serve warm.
