Ingredients
  

For the Chicken
  • 4 pieces bone-in skin-on chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
For the Sauce
  • 2 tablespoons vegetable oil neutral oil for sautéing
  • 1 small yellow onion thinly sliced
  • 3 cloves garlic minced
  • 4 pieces anchovies finely chopped
  • 1 teaspoon red pepper flakes adjust to taste
  • 2 tablespoons tomato paste
  • 1 can crushed tomatoes
  • 1 cup pitted green olives rinsed, dried, and halved
  • 2 tablespoons capers
For Serving
  • 2 tablespoons chopped fresh parsley for garnish

Method
 

Directions
  1. Season the chicken thighs with salt and pepper.
  2. Brown the chicken in the skillet, cooking skin-side down for about 5 minutes, then flipping for 4 to 5 more minutes.
  3. Sauté the onions in the same skillet for 2 to 3 minutes until they soften.
  4. Add garlic and seasonings, stirring for about 10 seconds until fragrant.
  5. Mix in the tomato paste, then gradually add crushed tomatoes, olives, and capers.
  6. Return chicken to the skillet, nestling into the sauce, and let simmer for 15 to 20 minutes.
  7. Remove from heat and let rest for 5 minutes before serving.
