  • 2 cups Seedless Red Grapes Slice large grapes in half.

Cooking Steps
  1. Preheat the oven to 400°F.
  2. Prepare the chicken by rinsing, patting it dry, and cutting it in half. Season with kosher salt and black pepper.
  3. Heat ¼ cup of olive oil in a skillet over medium heat and sauté the diced onion and shallot until golden brown, about 4-5 minutes.
  4. Add white wine, lemon juice, rosemary, and grapes to the skillet; cook for an additional 4-5 minutes.
  5. Sear the chicken in another skillet with remaining olive oil for 2 minutes per side. Drizzle with balsamic vinegar.
  6. Layer half of the onion and grape mixture in a roasting pan, add seared chicken, top with remaining mixture.
  7. Roast for 25-30 minutes or until chicken is cooked through.
  8. Serve immediately, pairing with rice, mashed potatoes, or salad.
