Making the Bagels
- In a large bowl, mix warm water, honey, and yeast. Let it rest for 5-10 minutes until foamy.
- Add flour and salt to the yeast mixture, then knead the dough for about 8-10 minutes until it’s smooth and elastic.
- Cover the dough with a clean cloth and let it rise in a warm place for 1 hour, or until it has doubled in size.
- Once risen, divide the dough into equal pieces, shape them into balls, then poke a hole in the center and stretch gently.
- In a large pot, bring 8 cups of water with baking soda and sugar to a boil. Boil each bagel for 30 seconds on each side, then remove and drain.
- Brush the boiled bagels with melted butter, then sprinkle with a mixture of brown sugar and ground cinnamon.
- Place the bagels on a parchment-lined baking sheet and bake at 425°F (220°C) for 18-20 minutes.
- Allow the bagels to cool slightly before serving. Enjoy them warm.
