Preparing the Cheesecake
- Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, cocoa powder, brown sugar, and melted butter. Mix well and then press into a 9-inch springform pan. Bake for 10 minutes until set, then set aside to cool.

- Add eggs one at a time, mixing on low speed until just combined.
- Pour cooled espresso and coffee liqueur into the cream cheese mixture. Blend until smooth.
- Carefully pour the coffee-infused filling over your cooled crust. Bake for 55-60 minutes, until the edges are set but the center slightly jiggles.
- Once baked, turn off the oven, crack the door open, and allow the cheesecake to cool in the oven for 1 hour. Then transfer to the refrigerator for at least 4 hours, or overnight.
