Preparing the Cheesecake
  1. Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, cocoa powder, brown sugar, and melted butter. Mix well and then press into a 9-inch springform pan. Bake for 10 minutes until set, then set aside to cool.
  2. In another bowl, beat softened cream cheese with an electric mixer until smooth. Gradually add granulated sugar, vanilla extract, and salt, blending until well combined and creamy.
  3. Add eggs one at a time, mixing on low speed until just combined.
  4. Pour cooled espresso and coffee liqueur into the cream cheese mixture. Blend until smooth.
  5. Carefully pour the coffee-infused filling over your cooled crust. Bake for 55-60 minutes, until the edges are set but the center slightly jiggles.
  6. Once baked, turn off the oven, crack the door open, and allow the cheesecake to cool in the oven for 1 hour. Then transfer to the refrigerator for at least 4 hours, or overnight.
