Making the Pinwheels
- Shred your cooked chicken using two forks or a stand mixer until tender.
- In a large mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, ranch seasoning mix, cooked bacon, and chopped green onions. Stir well until blended.
- Lay a tortilla flat and spoon the chicken mixture into the center, spreading it evenly.
- Tightly roll the tortilla from one end to encase the filling.
- Repeat with remaining tortillas and filling.
- Wrap each rolled tortilla in plastic wrap and refrigerate for at least 30 minutes.
- Carefully cut each rolled tortilla into 1-inch thick pinwheels.
- (Optional) Sprinkle with fresh parsley or dill before serving.
